In 2024, Quebec’s maple syrup production has surged to a record 239 million pounds, a significant increase from last year’s 124 million, thanks to favorable weather and adaptations by producers. While Canada’s maple syrup industry, which produces 75% of the world’s supply, faced challenges from climate fluctuations and a pandemic-driven demand spike, the Quebec reserve is recovering after dwindling to just 6.9 million pounds in 2023. U.S. producers, however, continue to struggle with lower yields due to adverse weather conditions. To adapt, Quebec producers are introducing millions of new taps, aiming for sustainable practices to combat the effects of climate change.
